Buying a Range Cooker - Some Thoughts

Introduction

Traditionally, a range cooker is a cooker that is always "on", and therefore always generating heat. Indeed, in some cases, this heat is used to provide heating for a home, or domestic hot water. The term "range" has, nowadays, been extended to include "range style" cookers - typically varying in width between 90cm and 1500cm, or more - which provide the same sophisticated cooking facilities as a traditional range, but are used solely for cooking. Cooking on a range preserves the moisture content of foodstuffs, which can be useful for improving the results of baking, or roasting, for example. In addition, range cookers are available in a number of different styles, and colours, and can provide a focal point for any kitchen.

Range Cooker Features, Benefits & Considerations

Aside from the physical space you have available to accommodate a range cooker, the main factor determining your choice is likely to be the full supply, or supplies, which you have available, or wish to utilise. You are no longer limited to a straight choice between natural gas and electricity, although, obviously, all natural gas and all electricity range cookers are available. You can now choose LPG, or "Liquid Petroleum Gas" - the commercial name for propane, and butane, gas - as an alternative to natural gas, or, indeed, combine natural gas, or LPG, with electricity in a so-called "dual fuel" range cooker. The Rangemaster Professional 90 model, for example, is available in dual fuel, all gas (natural, or LPG), or all electric, with a ceramic hob.

Gas, for example, is a popular choice for hobs, because it provides instant, and visible, heat. Ceramic, halogen, or induction hobs, driven by electricity, also provide excellent results, and the choice is really a matter of personal preference. Electricity, which can be thermostatically controlled, is usually the fuel of choice for ovens, although some cooks prefer the moist atmosphere created in a gas oven. One advantage of an electric oven is it ability to "self clean", via "catalytic", or "pyrolitic" liners, or coatings. The liners, or coatings, absorb grease and spoils such that when the oven is heated to a high temperature - either during normal operation, or a separate cleaning cycle - they are burnt off, or reduced to ash, which can be easily cleaned away. The Britannia L Line 90 Twin Ceramic model, for example, features a 53.4 litre electric main oven, and a 30.8 litre electric secondary oven.

With regard to the installation of a range cooker, you obviously need to think about the availability of fuel supplies, and their proximity to the proposed position of the cooker. Gas appliances, for example, must, by law, be fitted by a CORGI ("Council for Registered Gas Installers") member, who will be aware of appropriate Health and Safety legislation relating to ventilation, etc. Similarly, an electric cooker normally requires a dedicated cooking circuit - separate from the standard domestic circuit - protected by its own 30 ampere fuse, and should be installed by a professional electrician.
